Cottage cheese loaf - Recipe date-1921

1 cupful of chopped, cooked carrots

1 cupful of ground peanuts

1 cupful of bread crumbs

1 cupful of cottage cheese

2 eggs

2 tablespoonfuls of fat (drippings)

1 tablespoonful of chopped parsley

A little onion juice

½ teaspoonful of mustard

½ to 1 teaspoonful of salt

1 teaspoonful of cayenne pepper and paprika

Put cheese through sieve.  Beat eggs lightly and combine.  Pack the mixture well in a loaf pan.  Bake in a moderate oven until well set.  Turn on platter and garnish with lettuce.  Serve with tomato sauce (No. 6) and sprinkle chopped green pepper over the top.

 

Quantity: Can be used as a main dish for a family of six.
